Unfussy and uncomplicated, the cuisine prepared by the skillful young chef using top-quality ingredients makes this one of the best trattorias in Italy. As the name suggests, tripe features heavily on the menu alongside historic recipes using eel, wild greens, char, rabbit and even snails.
