On June 8th, during the international gastronomic festival Saint Petersburg Gourmet Days, restaurant BeefZavod will host a take-over by meat restaurant Açougue Central from Brazil. This restaurant is owned by chef Alex Atala and occupies 16th place in The World’s 50 Best Restaurants rating.

Açougue Central is the first meat project of the restaurant group D.O.M.; it’s led by Argentinian Alejandro Peyrou, who has been working with Alex Atala side by side for many years. Michelin guide has named the restaurant and the meat store «Mecca for meat lovers», and the well-regarded New Yorker advises Americans to set out there on their search for genuine flavor.

Chef gives a lot of attention to the quality of the meat: he chooses it from across the region, making arrangements with farmers who raise cattle exclusively for the restaurant.

Alejandro, as well as his European colleagues, preaches the «nose to tail» style of cooking, which means a respectful way of treating of a product fully with no-waste cooking. The restaurant’s cuisine can be called «a modern Latin American eclectic»; there are classic dishes of Brazilian and Argentinian cuisine, such as «vaca atolada»- stewed cattle with manioc root, as well as alternative cuts of all kinds.

The one-off dinner by Alejandro Peyrou in Russia will be cooked together with team of BeefZavod and their chef Roman Palkin. The menu will consist of the main dishes of Açougue Central, and the ingredients of which will be brought direct from Brazil. Pairing with a single-malt Scottish 12 year old whisky, The Singelton, will also be offered.

The event starts at 7:30 p.m.

The price of the tasting: 4 900 roubles.
